Ingredients
For the Chicken:
1 lb boneless, skinless chicken breasts or thighs, sliced into strips1/2 cup of your preferred BBQ sauce (smoky, sweet, or spicy – take your pick!)
1 tbsp olive oil
1/2 tsp paprika
1/4 tsp garlic powder
Salt and pepper to taste
For the Tacos:
8 corn tortillas1/2 cup freshly chopped pineapple
1/4 cup thinly sliced red onion
1/4 cup chopped cilantro
Lime wedges
Optional toppings: shredded cheese, avocado slices, sour cream, salsa
Directions
- Step 1: Marinate the Chicken:
In a large bowl, combine BBQ sauce, olive oil, paprika, garlic powder, salt, and pepper. Ensure your strips of chicken are well-coated and then add them to the frying pan.
Cover and store in a refrigerator for at least thirty minutes, or overnight for a deeper taste. - Step 2: Grill to Perfection:
Preheat the grill to medium-high heat. Skewer chicken strips or place them directly on the grill. Grill for 4-5 minutes per side or until fully cooked.
Meanwhile, grill pineapple slices for a few minutes per side, until you get a nice caramel. - Step 3: Assemble and Relish:
Heat tortillas according to package directions. Top a whole grain roll with grilled BBQ chicken, pineapple, red onion, and cilantro.
Squeeze a lime wedge over the top and add your favorite toppings and you’re having a taco party fit for the king!
Tips:
