Ingredients

  • 1 tablespoon olive oil

  • 1 large finely chopped onion

  • 2 cloves minced garlic

  • 800g (4 cans) diced tomatoes (with juice)

  • 1 liter vegetable broth

  • 1 cup cooked masoor dal (brown lentils)

  • 1/2 cup raw cashews, soaked for at least 2 hours

  • 4 tablespoons nutritional yeast

  • 1 teaspoon dried oregano

  • 1/2 teaspoon optional smoked paprika for a deeper flavor

  • Salt and black pepper to taste

  • Optional fresh basil leaves for garnish

Directions

  • Saute the Foundation:
    Heat olive oil in a large pot over medium heat. Cook onions until they get soft (takes about 5 minutes). Add garlic and cook for one more tasty minute.
  • Infuse Flavor with Simmer:
    Add diced tomatoes, vegetable broth, lentils, cashews, nutritional yeast, oregano, and paprika (if using). Bring to a simmer and cook for 15 minutes,
    let the tastes blend together.
  • Silky Smooth Blend:
    Put the soup in a blender and blend until smooth. If needed, add more broth to make the texture smoother. Add salt and pepper according to your preference.
  • Warm and Serve:
    Put the mixed soup back in the pot and warm it up. Put the soup in bowls and add fresh green leaves for a pretty look and tasty taste.
