1 tablespoon olive oil
1 large onion, chopped
2 cloves garlic, minced
4 medium carrots, diced
1.5 cups dry red lentils, rinsed
4 cups vegetable broth (low-sodium preferred)
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
Salt and pepper to taste
Optional garnish: Fresh cilantro, chopped lemon zest, crusty bread

- 1. Saute the Base:
Heat olive oil in a large pot over medium heat. Add chopped onions and cook for 5 minutes until they get soft. Add some garlic and cook for a minute more until it smells nice. - 2. Embrace the Veggies:
