Ingredients

  • 1 tablespoon olive oil

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 4 medium carrots, diced

  • 1.5 cups dry red lentils, rinsed

  • 4 cups vegetable broth (low-sodium preferred)

  • 1 teaspoon ground cumin

  • 1/2 teaspoon ground turmeric

  • Salt and pepper to taste

  • Optional garnish: Fresh cilantro, chopped lemon zest, crusty bread

Directions

  • 1. Saute the Base:
    Heat olive oil in a large pot over medium heat. Add chopped onions and cook for 5 minutes until they get soft. Add some garlic and cook for a minute more until it smells nice.
