Ingredients
2 medium boiled and mashed potatoes
1 cup mixed vegetables (carrot, peas, corn, green beans, or your preferred combination)
1/2 cup finely chopped onion
1/4 cup chopped cilantro
1 finely chopped green chili (adjust to your spice preference)
1 inch grated ginger
1/2 teaspoon cumin powder
1/4 teaspoon garam masala
Salt to taste
1/4 cup all-purpose flour
1/2 cup breadcrumbs
Oil for frying or baking
Directions
- 1. Mix it Up:
In a big bowl, smash the potatoes and combine them with diced vegetables, onion, cilantro, green chili, ginger, cumin powder, garam masala, and salt until you would have formed a paste. This also means that flavors must be equally distributed. - 2. Shape Up:
divide the mixture into equal parts and patties from this gently. - 3. Coat and Conquer:
Put two little pots – one with flour and another with breadcrumbs. First, dip each patty in flour, and then in the breadcrumbs for crispiness. - 4. Fry or Bake:
You can preheat the oven to 400°F (25°C) or you can heat oil in a skillet over medium flame. Place patties in a hot oil or on a parchment paper covered baking sheet. Cook it golden brown and crisp on both sides or bake 15-20 minutes, turning over the middle of cooking. - 5. Serve and Savor:
Serve hot with favourite dips chutney made with cilantro – mint, ketchup and yogurt. Combined with a bowl of rice salad or sandwich, such cutlets make a healthy and filling meal.
Tips:
- For extra crispiness, double dip in flour and breadcrumbs!
- Feeling adventurous? Experiment with different vegetables like sweet potato, beetroot, or cauliflower.
- No breadcrumbs? Crush some crackers or use oats instead!
- Opting for an oven-baked version? Brush the cutlets with a little oil before baking for that extra golden goodness.
