Ingredients

  • Wrappers:
24 delicate spring roll wrappers (easily available at most Indian grocery stores)

  • Filling:

  • 1/2 lb minced pork or chicken

  • 1 cup finely shredded cabbage

  • 1/2 cup chopped carrots

  • 1/4 cup diced green onions

  • 1/4 cup chopped celery

  • 1 clove minced garlic

  • 1 tbsp soy sauce

  • 1 tbsp oyster sauce (optional)

  • 1 tsp sesame oil

  • 1/2 tsp ginger powder

  • Salt and pepper to taste

  • Dipping Sauce:

  • 1/4 cup soy sauce

  • 1/4 cup rice vinegar

  • 1 tbsp honey

  • 1 tbsp sriracha (adjust for desired spice level)

  • 1 tsp sesame oil

  • 1 clove minced garlic

  • 1/4 cup chopped cilantro

Directions

  • For Filling:
    1.
In a large bowl, combine minced meat, shredded cabbage, carrots, chopped green onions, diced celery, minced garlic, soy sauce, and oyster sauce (if using).

    2. Add sesame oil, ginger powder, salt, and pepper to the mixture.

    3. Thoroughly mix all ingredients until well combined.

    4. Set the filling aside for later use.
  • For Rolling:
    1.
Place a spring roll wrapper on a clean surface.

    2. Spoon some of the filling mixture onto the bottom edge of the wrapper.

    3. Roll the wrapper tightly over the filling, folding in the sides as you go to form a neat roll.

    4. Seal the edges of the wrapper with water to ensure they stay closed.

    5. Repeat the rolling process with the remaining wrappers and filling.
  • For Frying:
    1.
Heat oil to 350°F (175°C) in a deep fryer or large pot.

    2. Carefully add the spring rolls to the hot oil in batches, making sure not to overcrowd the fryer.

    3. Fry the spring rolls for 2-3 minutes or until they are golden brown and crispy.

    4. Once cooked, remove the spring rolls from the oil and drain them on paper towels to remove excess oil.
  • For Serving:
    1.
In a small bowl, whisk together all the ingredients for the dipping sauce until well combined.

    2. Serve the hot spring rolls immediately with the dipping sauce on the side for dipping.

Tips:

  • Add a Desi touch by substituting meat with paneer or your favorite vegetables.
  • Prevent bursting during frying by avoiding overfilling the wrappers.
  • Keep wrappers moist by using a wet cloth while assembling.
  • Maintain the oil temperature by avoiding overcrowding in the frying pan.
  • Create a complete feast by serving spring rolls alongside Desi favorites like samosas or chaat.
