Ingredients

  • For the Sabudana mixture:

  • 1 cup sabudana (tapioca pearls)

  • 1 cup water

  • 1 large potato, boiled and mashed

  • ⅓ cup peanuts, roasted and finely chopped

  • 1 teaspoon grated ginger

  • 2-3 green chilies, finely chopped

  • 1 big handful of chopped cilantro

  • 1 teaspoon cumin seeds

  • Salt to taste

  • Lemon juice to taste

  • Oil for greasing the waffle maker

Directions

  • For Soaking:
    1. Place the sabudana in a bowl.

    2. Add enough water to cover the sabudana completely.

    3. Let it soak for 4-6 hours until it becomes soft and translucent.
  • For mixing:
    1.
Drain the soaked sabudana using a sieve or colander.

    2. In a large mixing bowl, combine the soaked sabudana, mashed potato, chopped peanuts, grated ginger, chopped green chilies, chopped cilantro (coriander leaves), cumin seeds, salt, and lemon juice.

    3. Mix all the ingredients together until they are evenly distributed and the sabudana is slightly sticky.
  • For Making:
    1. Heat up the waffle according to the manufacturer’s guidelines.

    2. Carefully oil or coat the waffle maker using oil or cooking spray.

    3. After the waffle maker is heated, spoon a spoonful sabudana mixture into the waffle maker.

    4. Make the mixture even across the whole surface to get thick patties.

    5. Close the waffle maker and cook the waffles for 3-4 minutes until they are golden brown and crispy on both sides.

    6. Repeat the process with the rest of the sabudana mixture (greasing the waffle maker lightly before each use).

Tips:

  • To make the sabudana mixture a bit spicy, use more green chilies.
  • If the sabudana mixture is too dry, add a little more water to adjust the consistency.
  • Serve the savoury sabudana waffles hot along with your favorite chutney or side-dish.
