  • ½ cup semolina (suji)

  • ¼ cup granulated sugar

  • 1 tsp crushed fennel seeds

  • ½ tsp baking powder

  • ¼ tsp salt

  • 1/3 cup melted ghee or vegetable oil

  • Water (approximately 1 cup, adjust as needed)

  • Vegetable oil for deep-frying

Directions

  • For Dough:
    1. Begin by Whisk together flour, semolina, sugar, crushed fennel seeds, baking powder, and salt in a large bowl.

    2. Add the melted ghee or vegetable oil and mix until well combined.

    3. Gradually add water mix until a soft, slightly sticky dough forms.

    4. Knead the dough for a few minutes, cover it with a damp cloth, and let it rest for 30 minutes.
  • For Shaping:
    1. On a lightly floured surface, knead the dough again for a minute.

    2. Divide the dough into small ping pong-sized balls.

    3. Roll each into a smooth, round shape.
  • For Frying:
    1. Heat oil in a deep pan or kadai over medium heat.

    2. Carefully add a few gulgulas at a time and fry until they turn golden brown and crispy.

  • For Serving:
    1. Remove the gulgulas from the oil and drain on paper towels.
