Ingredients

  • 1 cup plain yogurt

  • 2 tablespoons badam (almonds), finely chopped

  • 1 tablespoon pista (pistachios), crushed

  • A pinch of kesar (saffron) strands

  • 2 tablespoons honey or sugar (adjust to taste)

  • 1/2 teaspoon cardamom powder

  • 1 cup chilled milk

  • Ice cubes (optional)

  • Saffron strands and chopped pistachios for garnish

Directions

  • For soaking
    1. Put almonds in warm water and let it soak for a while.

    2. Peel off the skin from the soaked almonds.

    3. Grind the peeled almonds along with pounded pistachios until a paste is formed.

    4. Set the almond-pistachio paste aside for a burst of nutty flavor.

  • For Saffron Infusion:
    1.
Soak saffron strands in warm milk.

    2. Allow the saffron to soak for 10 to 15 minutes to release the color.
  • For Blending:
    1.
Add plain yogurt, almond-pistachio paste, saffron-rich milk, honey (or sugar), and cardamom powder in a blender until desired creaminess is reached.

    2. Adjust the thickness by pouring a little milk if necessary.

    3. Refrigerate the mixture for only 30 minutes to cool, allowing the flavors to blend smoothly like a creamy lullaby.
  • For Garnishing:
    1. Pour the chilled lassi into glasses.

    2. If needed, add ice.

    3. Decorate the top of each glass with a few saffron strands and chopped pistachios.

    4. Go ahead by preparing the garnishes so as to add to the dish’s visual appeal and taste.
