Ingredients

  • 2 tbsp vegetable oil

  • 1 tbsp butter

  • 1 large onion, finely chopped

  • 1 green chili, finely chopped (optional)

  • 1-inch ginger, finely chopped

  • 2 cloves garlic, finely chopped

  • 1 tomato, finely chopped

  • 1/2 cup mixed vegetables (peas, carrots, beans)

  • 1/2 cup water

  • 1 tsp pav bhaji masala

  • 1/2 tsp red chili powder (adjust to your spice preference)

  • 1/2 tsp turmeric powder

  • Salt to taste

  • 1/4 cup grated cheddar cheese

  • 1/4 cup chopped coriander leaves

  • 4 pavs (bread rolls)

Directions

  • 1. Heat Up the Flavors:
In a big pot or frying pan, heat oil and butter on medium heat. Add onions and green chili (if using) and cook them until they are soft. Add ginger and garlic, then cook for a minute until they smell good.
  • 2. The Tomato Tango:
Add the chopped tomato and cook until it becomes soft. Pour water in and use a tool to remove stuck brown bits from the pan.
  • 3. Spice it Up:
Mix in pav bhaji spices, red chili powder, turmeric and salt. Let the spices cook for a little while, so the tastes can mix together.
  • 4. Veggie Fiesta:
Add mixed vegetables and cook until tender-crisp. Don’t overcook; aim for that perfect al dente bite.
  • 5. Cheesy Climax:
Turn down the heat and gently fold in the grated cheese. Garnish with chopped coriander leaves, adjust salt to your liking, and let out a joyous foodie cheer!
  • 6. Pav Paradise:
Slice your pavs in half, toast them to a golden crisp, and get ready to dive in!

Tips:

  • For a smoother bhaji, blend the cooked vegetables before adding them back to the pan.
  • Make your vegetable mix your own by adding things you like such as green bell peppers, bits of cauliflower or paneer cubes.
  • Add a touch of tang with a squeeze of lemon juice for a bright, zesty twist.
  • Serve with chopped onions, a squeeze of lime, and favorite chutneys for the ultimate street-style experience.
