Ingredients

  • 1 ½ cups Seeraga Samba rice (or basmati rice)

  • 500g Chicken, bite-sized pieces

  • 3 tbsp Ghee or oil

  • 1 Bay leaf

  • 2 Green cardamoms

  • 2 Cloves

  • 1 Cinnamon stick

  • 1 Large onion, thinly sliced

  • 2 tbsp Ginger-garlic paste

  • 1 Green chili, chopped (optional)

  • 1/2 cup Curd (yogurt)

  • 1/4 cup Coriander leaves, chopped

  • 1/4 cup Mint leaves, chopped

  • 1/2 tsp Turmeric powder

  • 1 tsp Red chili powder (adjust to spice preference)

  • Salt to taste

  • Water (as needed)

Directions

  • Prepare the Stage:
    Wash and soak rice for 15 minutes in water. Rinse chicken and pat dry.
  • Spice Symphony:
    Heat ghee/oil in a pot. Add bay leaf, cardamom, cloves and cinnamon. Let the fragrant notes infuse for a minute while sizzling.
  • Onion Tango:
    Add sliced onions and fry until gold. Add in ginger-garlic paste and green chili Saute until fragrant.
  • Spiced Chicken Salsa:
    Add chicken, cook until lightly browned. Stir in turmeric and red chili powder.
  • Creamy Embrace:
    Add curd, let it simmer for 2-3 minutes for the chicken to absorb the creamy goodness.
  • The Grand Finale:
    Pour sufficient water to cover the chicken and rice. Season with salt. Boil, then simmer covered for 15-20 minutes until rice is fluffy.
  • Rest and Rise:
    Turn off heat, let the biryani rest for 10 minutes covered to meld flavors.

    Stir the biryani using a fork and garnish with coriander and mint. Serve hot with raita or with sides of your choice.
